Haddock Florentine    

 

     Serves 1

 

 

INGREDIENTS

 

1 small fillet of natural smoked or fresh haddock

¼  oz of butter

150ml / ¼ pint of whole milk

1 fresh tomato cut in half

150g of Fresh washed baby spinach

Black pepper

 

 

METHOD

 

  1. Cut  tomato in ½ and place under grill to brown

  2. Put the milk in a small pan and slowly heat but don’t boil.

  3. Add the fish and cook for around 4-5 mins

  4. Place butter in a non stick pan and melt.

  5. Add the spinach and a little black pepper then cook till just wilted.

  6. Place the spinach on the plate, top with the fish and serve with the tomato halves.
