Mackerel with Orange and Thyme

Serves 1.

 

Low GL.   Oily fish recipe.

Serve with side salad or steamed vegetables.

 

 

INGREDIENTS

 

1 small whole fresh mackerel, cleaned and head removed if preferred.

1 small orange (Slices of lemon can be used if preffered)

1 sprig of fresh thyme

Seasoning

METHOD

  1. Preheat the oven Pre-heat the oven 180C/275F, gas 5.

  2. Wash out the fish.

  3. Slice the orange and sit 3 - 4 slices in the body of the fish with the thyme and seasoning.

  4. Place on a sheet of foil big enough to make a parcel.

  5. Join the ends of the foil and place on a baking tray.

  6. Bake for around 20 mins until cooked through
