Salad Nicoise

 

 

 

Serves 1. Increase ingredients to serve more people.

 

Low GL,   Oily fish recipe

 

INGREDIENTS

 

1 medium egg

1 small tin sardines in brine, drained

4 olives

50g green beans 

2 new potatoes

4 cherry tomatoes cut in half

2 anchovies

1 spoon salad dressing

 

METHOD

 

  1. Boil the egg for 10 mins then run under cold water until cold and then peel.

  2. Boil the new potatoes till just cooked and cool.

  3. Boil the beans for 4 mins so they are still crunchy.

  4. Place the beans, potatoes, olives and tomatoes in a bowl and toss in a little of the dressing.

  5. Place the mix on the serving plate and top with the sardines.

  6. Cut the egg into 4 quarters and sit around the sardines.

  7. Place the anchovies over the sardines and drizzle a little more dressing over it.

 

 

Dressing

1 table spoon of olive oil

1 table spoon of lemon juice

1 dessert spoon of balsamic or cider vinegar

Pinch of dry mustard

Seasoning

 

Place in well sealed container and shake or beat with whisk.
